1 cup Arborio rice

4 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

3 large eggs, lightly beaten

1/2 cup raisins (optional)

Nutmeg for garnish (optional)

Instructions
 

In a medium saucepan, combine Arborio rice, 2 cups of milk, and salt. Bring to a gentle boil over medium heat, stirring occasionally. Reduce the heat to low, cover, and let simmer for about 20 minutes, or until the rice is tender and has absorbed the milk.

    In a separate bowl, whisk together the remaining 2 cups of milk, heavy cream, sugar, vanilla extract, and ground cinnamon until sugar is dissolved.

      Gradually add the milk mixture to the cooked rice, stirring constantly. Cook on low heat for an additional 10 minutes, allowing the pudding to thicken. Stir frequently to prevent sticking.

        In a small bowl, temper the beaten eggs by slowly adding a few spoonfuls of the hot rice pudding to the eggs, stirring continuously. This will bring the eggs to temperature without scrambling them.

          Slowly stir the egg mixture back into the rice pudding, mixing thoroughly. Cook for another 5 minutes until the pudding is creamy and slightly thickened.

            If using raisins, stir them in during the last few minutes of cooking.

              Remove from heat and let cool slightly. The pudding will thicken as it cools.

                Serve warm or chilled, dusted with a sprinkle of nutmeg if desired.
