Monterey Chicken Spaghetti Holiday Bake

8 ounces spaghetti

1 pound boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup BBQ sauce

1 cup shredded Monterey Jack cheese

1 cup diced tomatoes (canned or fresh)

1/2 cup sliced green onions (for garnish)

1/4 cup chopped fresh cilantro (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Spaghetti: In a large pot of lightly salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and set aside.

      Prepare Chicken: While the spaghetti cooks, season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.

        Cook Chicken: In a skillet over medium heat, cook the seasoned chicken for about 6-7 minutes on each side until cooked through and no longer pink. Remove from heat, allow to cool slightly, then shred or chop into bite-sized pieces.

          Combine Ingredients: In a large mixing bowl, combine the cooked spaghetti, shredded chicken, BBQ sauce, diced tomatoes, and half of the Monterey Jack cheese. Mix thoroughly until everything is well-coated.

            Assemble the Bake: Transfer the spaghetti mixture into a greased 9x13-inch baking dish. Spread evenly.

              Add Cheese Topping: Sprinkle the remaining Monterey Jack cheese evenly over the top of the spaghetti mixture.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with sliced green onions and chopped cilantro, if desired. Serve warm and enjoy the festive flavors!
