Morning Magic: Creamy Blueberry Oats

Ingredients
  

1 cup rolled oats

2 cups almond milk (or milk of choice)

1 cup fresh or frozen blueberries

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of salt

1/4 cup Greek yogurt (optional, for extra creaminess)

2 tablespoons chia seeds (optional, for added nutrition)

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, and a pinch of salt. Bring the mixture to a gentle simmer over medium heat.

    Stir in the honey (or maple syrup), vanilla extract, and cinnamon. Let it simmer for about 5-7 minutes, stirring occasionally, until the oats are creamy and have absorbed most of the liquid.

      If using chia seeds, stir them in now and let the mixture cook for an additional 2-3 minutes until thickened.

        Gently fold in the blueberries and cook for an additional 2 minutes, just until the blueberries are warmed through and bursting with flavor.

          For an extra touch of creaminess, stir in the Greek yogurt until well combined.

            Remove from heat and let it sit for a couple of minutes to thicken slightly.

              Serve warm in bowls, garnished with fresh blueberries, a drizzle of honey or syrup, and mint leaves if desired.
