4 chicken thighs (bone-in, skin-on preferred)

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon ground cinnamon

1 teaspoon ground turmeric

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spice preference)

1 cup chicken broth

1 can (14 oz) chickpeas, drained and rinsed

1 cup dried apricots, chopped

1 lemon, juiced

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

Sliced almonds, for garnish

Instructions
 

Marinate the Chicken: In a large bowl, mix the olive oil, garlic, ginger, cumin, coriander, cinnamon, turmeric, smoked paprika, cayenne pepper, salt, and pepper. Add the chicken thighs and coat well with the marinade. Cover and let marinate for at least 30 minutes to 2 hours in the refrigerator.

    Sauté Onions: In a large, heavy-bottomed pot or Dutch oven, heat a little more olive oil over medium heat. Add the chopped onion and sauté until softened and translucent, about 5 minutes.

      Brown the Chicken: Remove the chicken from the marinade (reserve the marinade) and place it in the pot. Sear the chicken on all sides until golden brown, about 4-5 minutes per side. This adds depth of flavor.

        Combine Ingredients: Once chicken is browned, add the reserved marinade, chicken broth, chickpeas, chopped apricots, and lemon juice to the pot. Stir gently to combine all ingredients.

          Simmer the Dish: Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, or until the chicken is cooked through and tender.

            Finish and Serve: Adjust seasoning if necessary. Serve the Moroccan spiced chicken with couscous or rice, spooning the sauce and chickpeas over the top. Garnish with fresh cilantro or parsley and sliced almonds for added crunch.
