Ingredients
  

1 large round loaf of Sicilian bread (or any sturdy Italian bread)

1/2 pound ham, sliced thin

1/2 pound mortadella, sliced thin

1/2 pound salami, sliced thin

1/2 pound provolone cheese, sliced thin

1/2 cup green olives, pitted and chopped

1/2 cup black olives, pitted and chopped

1/4 cup pickled cauliflower, chopped

1/4 cup roasted red peppers, sliced

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Prepare the Olive Salad: In a medium bowl, combine the chopped green and black olives, pickled cauliflower, roasted red peppers, olive oil, red wine vinegar, oregano, salt, and pepper. Mix well and taste to adjust seasoning. Set aside to allow the flavors to meld.

    Slice the Bread: Horizontally slice the loaf of bread in half. Hollow out a small portion of the inner bread from both halves to create more space for the fillings, but be careful not to break the crust.

      Layer the Meats and Cheese: Start by layering half of the ham on the bottom half of the bread, followed by the mortadella, salami, and provolone cheese. Ensure an even distribution for a balanced sandwich.

        Spread the Olive Salad: Generously spread half of the olive salad over the cheese layer. You can add as much or as little as you prefer depending on your taste.

          Repeat Layers: Add the remaining meats and cheese in the same order, finishing with the other half of the olive salad on top.

            Assemble and Press: Place the top half of the bread onto the assembled sandwich. Press down firmly to compress the layers and help meld the flavors together.

              Wrap and Refrigerate: Wrap the entire sandwich tightly in plastic wrap or parchment paper. Place it in the refrigerator for at least 30 minutes (ideally a few hours) for the flavors to deepen and the sandwich to hold its shape.

                Slice and Serve: After chilling, unwrap the sandwich and slice it into wedges or quarters. Optionally, garnish with freshly chopped parsley before serving.
