Mustard Hasselback Kielbasa Bites

Ingredients
  

1 pound kielbasa sausage

1/4 cup Dijon mustard

1/4 cup honey

2 tablespoons apple cider vinegar

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 teaspoon black pepper

1 tablespoon olive oil

Optional: fresh chopped parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400F (200C).

    Prepare the Kielbasa: Place the kielbasa on a cutting board and use a sharp knife to make horizontal cuts into the sausage, about 1/4 inch apart, stopping about 1 inch from the bottom. This is to create the Hasselback effect, allowing the glaze to seep in.

      Make the Glaze: In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, garlic powder, smoked paprika, thyme, and black pepper until well combined.

        Apply the Glaze: Place the sliced kielbasa in a baking dish. Brush the mustard glaze generously over the top and between the cuts of the sausage, ensuring it gets into the crevices.

          Drizzle with Olive Oil: Drizzle the olive oil over the kielbasa to help with caramelization.

            Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the kielbasa is browned and caramelized.

              Garnish and Serve: Remove from the oven and let it cool slightly. Garnish with fresh parsley, if desired. Slice into bite-sized pieces and serve warm.
