1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 tablespoon sugar

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 cups mixed berries (strawberries, blueberries, raspberries)

¼ cup berry preserves (for drizzle)

Fresh mint leaves (for garnish)

Instructions
 

In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until fully combined and crumbly.

    Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust. Chill in the refrigerator while you prepare the cheesecake filling.

      In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

        Gradually add the powdered sugar and vanilla extract, mixing until fully integrated and no lumps remain.

          In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.

            Pour the cheesecake filling over the chilled crust and spread it evenly with a spatula.

              Top the cheesecake with the mixed berries, distributing them evenly across the surface.
