For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

For the topping:

1 cup fresh strawberries, hulled and sliced

1 cup fresh blueberries

1 tbsp lemon juice

Optional: whipped cream for garnish

Instructions
 

Prepare the crust: In a medium mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9x9-inch square baking dish to form an even layer. Refrigerate for about 15 minutes to set.

    Make the cheesecake filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add powdered sugar and vanilla extract, mixing until fully incorporated.

      Whip the cream: In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined. Be careful not to deflate the whipped cream.

        Assemble the bars: Spread the cheesecake filling evenly over the chilled crust. Smooth the top with a spatula and refrigerate for at least 4 hours or until set.

          Prepare the topping: In a small bowl, toss the sliced strawberries with lemon juice (this helps to enhance their flavor). When ready to serve, arrange the sliced strawberries in the shape of stripes on top of the cheesecake and place blueberries in the top left corner for the 'stars' section of the flag.

            Slice and serve: Once the cheesecake is fully set, remove it from the baking dish using the edges of the parchment paper (if used). Cut into bars, and serve chilled. Optionally top each bar with a dollop of whipped cream before serving.
