1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

2 (8 oz) packages cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 can (21 oz) cherry pie filling

Fresh cherries for garnish (optional)

Mint leaves for garnish (optional)

Instructions
 

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are fully coated and resemble wet sand. Set aside.

    Make the Cheesecake Layer: In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.

      Whip the Cream: In another bowl, whip the heavy cream using an electric mixer until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully blended and fluffy.

        Assemble the Parfaits: In serving glasses or jars, start by adding a layer of the graham cracker mixture at the bottom. Follow with a layer of the cheesecake mixture, and then a layer of cherry pie filling. Repeat the layers until the glasses are filled, finishing with a dollop of cherry pie filling on top.

          Chill and Serve: Refrigerate the parfaits for at least 2 hours before serving to allow the flavors to meld and the layers to set. Just before serving, garnish with fresh cherries and mint leaves if desired.
