24 Oreo cookies (regular or double-stuffed)

2 cups heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup Funfetti cake mix (not prepared)

1 cup rainbow sprinkles (plus extra for garnish)

1 cup milk (for soaking cookies)

Instructions
 

Prepare the Cream Mixture: In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using a hand or stand mixer, whip the mixture on medium speed until stiff peaks form (about 3-5 minutes).

    Incorporate Cake Mix and Sprinkles: Gently fold in the Funfetti cake mix and rainbow sprinkles into the whipped cream mixture until evenly distributed. Be careful not to deflate the whipped cream.

      Assemble the Cake: Pour the milk into a shallow dish. Quickly dip each Oreo cookie into the milk, ensuring both sides are coated but not overly soggy.

        Layer the Ingredients: In a 9x9 inch or similar-sized baking dish, place a layer of dipped Oreo cookies along the bottom. Spread a layer of the Funfetti whipped cream mixture over the cookies (about half of the mixture). Repeat the process with another layer of dipped Oreos, followed by the remaining whipped cream mixture.

          Top Layer: Finish with a final layer of dipped Oreos on top. Cover the entire cake with plastic wrap or a lid.

            Chill the Cake: Refrigerate the icebox cake for at least 4 hours (or overnight) to allow the cookies to soften and the flavors to meld.
