2 cups of graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup powdered sugar

2 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1/4 cup freshly squeezed lemon juice

Zest of 2 lemons

2 cups heavy whipping cream

1 teaspoon vanilla extract

Lemon slices and mint leaves for garnish (optional)

Instructions
 

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and powdered sugar. Mix until well combined and crumbly. Press this mixture firmly into the bottom of a 9x13 inch pan to form an even crust. Set aside.

    Make the Cream Cheese Layer: In a large bowl, beat the softened cream cheese with granulated sugar using an electric mixer until smooth and fluffy. Add in the lemon juice and lemon zest, mixing until fully incorporated.

      Whip the Cream: In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.

        Combine Layers: Gently fold the whipped cream into the cream cheese mixture using a rubber spatula, taking care not to deflate the cream. The mixture should be light and airy.

          Assemble the Cake: Spread the cream cheese and whipped cream mixture evenly over the graham cracker crust in the pan. Smooth the top with a spatula.

            Chill: Cover the cake with plastic wrap and refrigerate for at least 4 hours, or ideally overnight, to set properly.

              Serve: Once set, slice into squares, garnish with lemon slices and mint leaves if desired, and serve chilled.
