1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup orange juice (freshly squeezed for best flavor)

1 tablespoon orange zest

2 tablespoons gelatin powder

¼ cup cold water

Orange slices and whipped cream (for garnish)

Instructions
 

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until all crumbs are coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Refrigerate while making the filling.

    Dissolve Gelatin: In a small bowl, sprinkle gelatin powder over cold water and let it sit for about 5 minutes to bloom. Then, microwave for about 15-20 seconds until completely dissolved. Set aside.

      Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well incorporated.

        Add Citrus Flavor: Pour in the orange juice and orange zest while mixing on low speed until fully combined.

          Incorporate Whipped Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no white streaks remain.

            Combine Gelatin: Allow the dissolved gelatin to cool slightly before mixing it into the cheesecake filling. Stir until well combined.

              Assemble the Cheesecake: Pour the filling over the chilled crust in the springform pan. Smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 6 hours or overnight until set.

                Serve: Once set, remove the cheesecake from the springform pan. Garnish with orange slices and dollops of whipped cream before slicing into pieces to serve.
