1 package (15.35 oz) Oreo cookies

8 oz cream cheese, softened

1 teaspoon peppermint extract

12 oz white chocolate chips

1 tablespoon coconut oil (optional)

Prepare the Oreos: In a food processor, add the Oreo cookies and pulse until they are finely crushed. Transfer the crumbs to a mixing bowl.

    Mix Filling: In the same bowl, add the softened cream cheese and peppermint extract to the crushed Oreos. Using a spatula or your hands, combine the mixture thoroughly until it forms a dough-like consistency.

      Shape the Truffles: Scoop about 1 tablespoon of the mixture and roll it into a ball. Place the truffles on a baking sheet lined with parchment paper. Repeat until all the mixture is used up.

        Chill: Place the baking sheet in the refrigerator for 30 minutes to allow the truffles to firm up.
