1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

Pinch of salt

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

½ cup water

Instructions
 

Prepare the Crust:

    - In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and a pinch of salt. Mix until well combined.

      - Press the mixture firmly into the bottom of a 9x9-inch baking pan to create an even layer. Set aside.

        Make the Cheesecake Filling:

          - In a large mixing bowl, beat the softened cream cheese using an electric mixer on medium speed until smooth and creamy.

            - Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated.

              - In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.

                Assemble the Bars:

                  - Pour the cheesecake filling over the prepared crust and spread it evenly with a spatula.

                    - Cover with plastic wrap and refrigerate for at least 4 hours or until set.

                        - In a saucepan, combine sliced strawberries, granulated sugar, lemon juice, cornstarch, and water. Cook over medium heat until the mixture begins to bubble and thicken, about 5-7 minutes.

                          - Remove from heat and let it cool completely.
