2 cups fresh strawberries, hulled and sliced

1 tablespoon sugar (for strawberries)

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

8 ounces cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

Fresh mint leaves (for garnish, optional)

Prepare the Strawberries: In a medium bowl, combine sliced strawberries and 1 tablespoon of sugar. Toss to coat, and let them sit for about 10-15 minutes until they release their juices and soften slightly.

    Make the Crust: In another bowl, mix graham cracker crumbs and melted butter until well combined. The mixture should resemble wet sand.

      Prepare the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add in powdered sugar and vanilla extract, mixing until fully combined and fluffy.

        Whip the Cream: In a separate bowl, whip the heavy cream until it forms stiff peaks. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

          Assemble the Parfaits: In serving glasses or jars, start layering with a spoonful of the graham cracker crust, followed by a layer of the cheesecake filling, and then a layer of the macerated strawberries.
