Ingredients
  

2 cups mixed fresh berries (strawberries, blueberries, raspberries)

1 cup heavy whipping cream

1 cup mascarpone cheese

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 package (about 8 oz) graham crackers

Fresh mint leaves for garnish (optional)

Instructions
 

Begin by washing and slicing the strawberries. If using whole berries, leave them intact. In a mixing bowl, combine all the berries and set aside.

    In a large bowl, use an electric mixer to whip the heavy cream until soft peaks form.

      In another bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and well combined, then gently fold in the whipped cream to create a light, airy mixture.

        To assemble the cake, take a 9x5-inch loaf pan. Start by placing a layer of graham crackers at the bottom, breaking them as necessary to fit.

          Spread a layer of the mascarpone cream over the graham crackers, followed by a layer of mixed berries. Repeat the layers (graham crackers, cream, berries) until the pan is full, ending with a layer of cream on top.

            Cover the loaf pan with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the cake to set.

              Once chilled and set, carefully invert the cake onto a serving platter and remove the pan. You can top it with additional fresh berries and mint leaves for garnish.

                Slice and serve chilled for a refreshing summer treat!
