2 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup strawberry soda (chilled)

1/3 cup vegetable oil

1 tablespoon apple cider vinegar

1 teaspoon vanilla extract

1 cup fresh strawberries, chopped (plus extra for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, combine the chilled strawberry soda, vegetable oil, apple cider vinegar, and vanilla extract. Stir gently to mix.

        Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix – it’s okay if there are some lumps. Gently fold in the chopped strawberries.

          Bake the Cake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.

            Cool the Cake: Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.

              Serve: Once the cake is completely cooled, slice it into squares. Garnish with fresh strawberries on top, and if desired, serve with whipped cream or vanilla ice cream.
