Ingredients
  

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

8 ounces cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

½ cup creamy peanut butter

½ cup strawberry or raspberry jam

1 cup whipped cream, or whipped topping

½ cup white chocolate chips, melted

¼ cup powdered sugar for dusting (optional)

Miniature snowflake sprinkles (for garnish)

Instructions
 

Prepare the Base: In a medium bowl, combine graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of a lined muffin tin to form a crust base. Chill in the refrigerator while you prepare the filling.

    Make the Cheesecake Mixture: In a large mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat with an electric mixer until smooth. Add the creamy peanut butter and mix until well-blended.

      Fold in the Whipped Cream: Gently fold the whipped cream into the cream cheese and peanut butter mixture until no streaks remain. Be careful not to deflate the whipped cream for a lighter texture.

        Layer the PB&J: Remove the crust from the fridge and evenly spoon a layer of strawberry or raspberry jam onto the crust. Then spoon the cheesecake mixture on top of the jam, filling each muffin tin cup to the top.

          Freeze the Bites: Place the muffin tin in the freezer and freeze the cheesecake bites for at least 4 hours, or until they are firm.

            Melt the White Chocolate: While the bites are freezing, melt the white chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.

              Coat the Snow Bites: Once the cheesecake bites are firm, remove them from the muffin tin. Dip each one in the melted white chocolate, allowing the excess to drip off.

                Decorate: Dust with powdered sugar (if using) and sprinkle miniature snowflake sprinkles on top for a festive look.

                  Serve: Place the North Pole PB&J Cheesecake Snow Bites on a platter and return them to the freezer to firm up once more, or serve immediately for a delightful treat!
