Ingredients
  

  • 2 cups black beans cooked and drained
  • 2 whole avocado diced
  • 1.5 cups cherry tomatoes halved
  • 1 cup corn cooked
  • 0.5 cup red onion diced
  • 0.25 cup cilantro chopped

Instructions
 

  • In a large bowl, combine the black beans, corn, cherry tomatoes, red onion, and cilantro.
  • Gently fold in the diced avocado, being careful not to mash it.
  • Drizzle with olive oil and lime juice, then season with salt and pepper to taste.
  • Toss everything together until well mixed.
  • Serve immediately in bowls, garnished with extra cilantro if desired.

Notes

This bowl can be customized with additional toppings like cheese, sour cream, or hot sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
