Ingredients
  

4 cups rhubarb, chopped (fresh or frozen)

1 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup rolled oats

1 cup all-purpose flour

1/2 cup packed brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or cooking spray.

    In a large mixing bowl, combine the rhubarb, granulated sugar, cornstarch, vanilla extract, and lemon juice. Toss to coat the rhubarb evenly and set aside.

      In another bowl, mix the rolled oats, all-purpose flour, brown sugar, ground cinnamon, and salt together. Pour in the melted butter and stir until the mixture is well combined and crumbly.

        Pour the rhubarb mixture into the bottom of the prepared baking dish, spreading it evenly.

          Sprinkle the oat topping over the rhubarb mixture, covering it well with the crumble.

            Bake in the preheated oven for about 40-45 minutes, or until the topping is lightly browned and the rhubarb is bubbling.

              Remove from oven and allow to cool slightly before serving. Enjoy warm, optionally topped with a scoop of vanilla ice cream or whipped cream for extra indulgence!
