Old Fashioned Vegetable Beef Soup

Ingredients
  

1 pound beef stew meat, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

3 carrots, sliced

3 stalks celery, diced

2 large potatoes, peeled and cubed

1 can (14.5 oz) diced tomatoes, with juice

4 cups beef broth

1 cup green beans, trimmed and cut into pieces

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

1 cup frozen peas (optional)

Fresh parsley for garnish (optional)

Instructions
 

In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium heat.

    Add the beef cubes and season with salt and pepper. Brown the meat on all sides for about 5-7 minutes. Remove the beef and set aside.

      In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 3 minutes.

        Add the sliced carrots, diced celery, and cubed potatoes. Stir and cook for an additional 5 minutes.

          Return the browned beef to the pot. Add the diced tomatoes, beef broth, green beans, thyme, oregano, and bay leaf.

            Stir everything together, ensuring the meat and vegetables are submerged in the liquid. Bring to a boil.

              Reduce the heat to low, cover, and let simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the flavors meld together.

                If using, add the frozen peas during the last 10 minutes of cooking. Adjust seasoning with more salt and pepper if needed.

                  Remove the bay leaf before serving. Ladle the soup into bowls and garnish with fresh parsley, if desired.
