1 lb (450g) boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 cup BBQ sauce (preferably honey-infused)

1 small onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1/4 cup fresh cilantro, chopped (for garnish)

Lemon wedges (for serving, optional)

Instructions
 

Prepare the Chicken: In a medium bowl, mix the chicken thighs with smoked paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.

    Sear the Chicken: Heat olive oil in a large skillet or frying pan over medium-high heat. Add the seasoned chicken thighs and cook for about 5-6 minutes on each side until golden brown. Remove the chicken from the pan and set aside.

      Sauté Vegetables: In the same pan, add the diced onion and bell pepper. Sauté for about 3-4 minutes until they soften. Add minced garlic and cook for an additional minute until fragrant.

        Combine Rice and Broth: Stir in the rice, followed by the chicken broth and half of the BBQ sauce. Mix well to combine all ingredients.

          Add Chicken Back: Nestle the seared chicken thighs back into the pan, spooning some of the sauce over the top. Bring to a light simmer.

            Cover and Cook: Reduce the heat to low, cover the pan, and allow it to cook for 20-25 minutes or until the rice is cooked and has absorbed the liquid.

              Finish with BBQ Sauce: After the rice is tender and fluid is evaporated, drizzle the remaining BBQ sauce on top. Give it a gentle toss to incorporate everything.

                Garnish and Serve: Remove from heat, garnish with chopped cilantro, and serve with lemon wedges if desired.
