2 lbs boneless, skinless chicken thighs

1 cup long-grain white rice

1 ½ cups chicken broth

1 cup honey BBQ sauce

1 medium onion, diced

3 cloves garlic, minced

1 cup bell peppers (red and green), diced

1 cup frozen corn

1 tsp smoked paprika

½ tsp chili powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, for garnish

Lime wedges, for serving

Instructions
 

Sear the Chicken: In a large, deep skillet or a dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt, pepper, smoked paprika, and chili powder. Once the oil is hot, add the chicken and sear for about 4-5 minutes on each side, until golden brown. Remove the chicken from the pan and set aside.

    Sauté Vegetables: In the same pan, add the diced onion and garlic. Sauté for 2-3 minutes until the onion is translucent. Then, add the diced bell peppers and corn, stirring well to combine.

      Add Rice and Liquid: Stir in the rice, allowing it to toast slightly in the pan, about 2 minutes. Pour in the chicken broth and mix well. Return the seared chicken to the pan, placing it on top of the rice mixture.

        Add BBQ Sauce: Drizzle half of the honey BBQ sauce over the chicken. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pan with a lid and let it simmer for 20-25 minutes, or until the rice is cooked and has absorbed all the liquid.

          Finish and Garnish: Once cooked, remove the pan from heat, and let it sit (covered) for an additional 5 minutes. Drizzle the remaining BBQ sauce over the chicken. Fluff the rice with a fork, and garnish with freshly chopped parsley.
