1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup long-grain rice

1 ½ cups low-sodium chicken broth

½ cup BBQ sauce (store-bought or homemade)

3 tbsp honey

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup frozen corn (optional)

1 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or parsley for garnish

Instructions
 

Prepare the Chicken: In a mixing bowl, combine chicken pieces with salt, pepper, and smoked paprika. Set aside to marinate for about 10 minutes.

    Sauté Aromatics: In a large deep skillet or pan, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent. Add the minced garlic and diced bell pepper, cooking for another 2 minutes until fragrant.

      Brown the Chicken: Increase the heat to medium-high and add the chicken pieces to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

        Make the Sauce: In a small bowl, mix together the BBQ sauce and honey. Pour this mixture over the chicken, ensuring it is evenly coated. Stir well to combine.

          Add Rice and Broth: Add the rice to the skillet, stirring to coat in the BBQ mixture. Pour in the chicken broth and bring to a gentle boil.

            Simmer and Cook: Reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice is tender and has absorbed the liquid. Stir in the frozen corn during the last 5 minutes of cooking.

              Finish and Serve: Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with chopped cilantro or parsley before serving.
