Ingredients
  

1 lb ground Italian sausage (or turkey for a lighter option)

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (red or green)

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 cups uncooked lasagna noodles, broken into pieces

1 can (15 oz) ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Fresh basil for garnish

Optional: Red pepper flakes for a spicy kick

Instructions
 

Brown the Sausage: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the ground Italian sausage and cook until browned, breaking it apart with a wooden spoon. This should take about 5-7 minutes.

    Sauté Vegetables: Add the chopped onion, garlic, and bell pepper to the pot. Sauté for another 3-4 minutes until the vegetables are softened and fragrant.

      Add Tomatoes and Broth: Stir in the crushed tomatoes and chicken/vegetable broth. Mix well and bring to a gentle simmer.

        Incorporate Noodles: Add the broken lasagna noodles to the pot. Stir to ensure they are submerged in the broth. Let it cook for about 10-12 minutes, or until the noodles are al dente, stirring occasionally.

          Cheesy Mixture: In a separate bowl, mix the ricotta cheese with half of the mozzarella and Parmesan cheese, Italian herbs, and a pinch of salt and pepper.

            Combine and Serve: Once the noodles are cooked, remove the pot from heat. Stir in the cheesy mixture until well combined. Taste and adjust seasoning with salt and pepper if necessary.

              Garnish: Serve the soup hot, topped with the remaining mozzarella and Parmesan cheese, and sprinkle fresh basil on top. Drizzle with a bit of olive oil if desired. Optionally add red pepper flakes for a little heat.
