1 lb large shrimp, peeled and deveined

1 cup orzo pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 bell pepper, diced (any color)

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

2 cups low-sodium chicken broth

1 lemon, juiced and zested

1 teaspoon dried oregano

Salt and black pepper to taste

1 cup baby spinach

1/2 cup feta cheese, crumbled (optional)

Fresh parsley, chopped for garnish

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 3-4 minutes until softened. Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

    Add the Shrimp: Increase the heat to medium-high, and add the shrimp to the pot. Cook for about 2-3 minutes until they turn pink but are not fully cooked through. Season with salt and black pepper. Remove the shrimp from the pot and set aside.

      Cook the Orzo: In the same pot, add the orzo and cherry tomatoes, stirring to combine. Pour in the chicken broth, lemon juice and zest, and dried oregano. Bring to a simmer, then reduce heat to low. Cover and cook for about 10 minutes, or until the orzo is al dente and has absorbed most of the liquid, stirring occasionally.

        Combine Everything: Once the orzo is cooked, add the baby spinach and the shrimp back into the pot. Stir gently until the spinach is wilted and the shrimp are fully cooked through, about 2-3 minutes.

          Finish and Serve: Taste for seasoning and adjust with more salt, pepper, or lemon juice if desired. If using, sprinkle crumbled feta cheese over the top. Garnish with fresh parsley before serving.
