2 cups long-grain white rice

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes with green chilies

1 can (15 oz) black beans, drained and rinsed

2 cups vegetable broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 cup frozen corn (optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.

    Stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until they soften.

      Add the rinse and drained black beans, diced tomatoes (with their juices), and frozen corn (if using) to the pot, mixing everything well.

        Pour in the vegetable broth and add the rice, chili powder, cumin, paprika, salt, and pepper. Stir to combine all the ingredients evenly.

          Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

            After the cooking time, turn off the heat and allow the pot to sit, covered, for an additional 5 minutes. Then, fluff the rice with a fork.

              Garnish the dish with freshly chopped cilantro and serve with lime wedges on the side for an extra burst of flavor.
