2 cups all-purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cardamom

1/4 teaspoon ground cloves

1/2 cup unsalted cold butter, cubed

1/2 cup heavy cream, plus extra for brushing

Zest of 1 large orange

1 tablespoon orange juice

1 teaspoon vanilla extract

1/4 cup chopped crystallized ginger (optional)

1/3 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, cardamom, and cloves. Whisk together until well combined.

      Cut in the Butter: Add the cold cubed butter to the dry mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Add Wet Ingredients: In a separate bowl, mix the heavy cream, orange zest, orange juice, and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined. If using, fold in the chopped crystallized ginger and nuts.

          Form the Dough: Transfer the dough to a lightly floured surface and gently knead it a couple of times to bring it together. Pat the dough into a circle about 1-inch thick.

            Cut the Scones: Use a sharp knife or a pizza cutter to cut the dough into 8 wedges. Place the scones onto the prepared baking sheet, leaving some space between them.

              Brush and Bake: Brush the tops of the scones with a little heavy cream for a golden finish. Bake in the preheated oven for 15-20 minutes or until lightly golden brown on top.

                Cool and Serve: Once baked, remove the scones from the oven and let them cool on a wire rack for a few minutes. Serve warm with butter, clotted cream, or jam.
