Ingredients
  

4 salmon fillets (about 6 oz each)

1 cup fresh orange juice (about 3-4 oranges)

Zest of 1 orange

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 inch piece of ginger, grated

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Orange slices for garnish (optional)

Instructions
 

Prepare the Marinade: In a mixing bowl, combine the fresh orange juice, orange zest, soy sauce, honey, Dijon mustard, minced garlic, and grated ginger. Whisk until well mixed.

    Marinate the Salmon: Place the salmon fillets in a shallow dish or zip-top plastic bag. Pour half of the orange glaze over the salmon, reserving the other half for later. Allow the salmon to marinate in the fridge for at least 30 minutes (up to 2 hours for more flavor).

      Preheat Your Oven: While the salmon marinates, preheat your oven to 400°F (200°C).

        Prepare for Baking: Line a baking dish with parchment paper or lightly grease it. Remove the salmon from the marinade and place it in the prepared dish. Drizzle with olive oil and season with salt and pepper.

          Bake the Salmon: Place the salmon in the oven and bake for about 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.

            Glaze the Salmon: While the salmon is baking, pour the reserved marinade into a small saucepan. Bring to a simmer over medium heat and let it cook for about 5-7 minutes, or until it thickens slightly.

              Finish and Serve: Once the salmon is done baking, remove it from the oven and brush it with the thickened glaze. Garnish with fresh cilantro or parsley and orange slices if desired.
