Ingredients

2 cups all-purpose flour

1 cup unsalted butter, softened

3/4 cup powdered sugar

1/4 cup granulated sugar

Zest of 2 large oranges

1 teaspoon vanilla extract

1/4 teaspoon salt

1 tablespoon freshly squeezed orange juice (optional for more flavor)

Optional: 1/2 cup chopped nuts or chocolate chips for added texture

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Butter and Sugars: In a large mixing bowl, cream together the softened butter, powdered sugar, and granulated sugar until light and fluffy, about 3-4 minutes.

Add Zest & Vanilla: Incorporate the orange zest and vanilla extract, mixing until just combined. If you want a stronger orange flavor, add in the freshly squeezed orange juice as well.

Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour and salt. Gradually add this mixture to the butter mixture, mixing on low speed until a dough forms. If you'd like to include nuts or chocolate chips, fold them in at this stage.

Shape the Cookies: Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet. Space them about 2 inches apart to allow for spreading.

Flatten Slightly: Use the bottom of a glass or your fingers to gently flatten each cookie to about 1/4 inch thickness.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges start to turn golden. Be careful not to over bake; the cookies should remain pale in color.

Cool: Once baked, remove them from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy your zesty orange shortbread cookies with tea, coffee, or as a delightful snack throughout the day!
