4 bone-in, skin-on chicken thighs

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 head of garlic, separated into cloves (unpeeled)

1 lemon, zested and sliced

1/2 cup white wine

1/4 cup unsalted butter, melted

Fresh parsley, chopped (for garnish)

Preheat the oven: Preheat your oven to 425°F (220°C).

    Prepare the chicken: Pat the chicken thighs dry with paper towels. This will help them crisp up nicely during roasting.

      Season the chicken: In a large bowl, mix together the olive oil, salt, pepper, rosemary, and thyme. Add the chicken thighs and toss until they are well coated in the herb mixture.

        Prepare the baking dish: In a large roasting pan, arrange the seasoned chicken thighs skin-side up. Scatter the unpeeled garlic cloves and lemon slices around the chicken.

          Make the sauce: In a small bowl, mix the white wine and melted butter together. Drizzle the mixture over the chicken and garlic.

            Roast the chicken: Place the roasting pan in the preheated oven and roast for 40-50 minutes, or until the chicken is golden brown, juices run clear, and it reaches an internal temperature of 165°F (75°C).

              Rest and serve: Once cooked, remove the pan from the oven and let the chicken rest for 5-10 minutes. Garnish with chopped parsley before serving. Enjoy with crusty bread or over rice to soak up the delicious garlic-infused sauce!
