1 loaf of crusty bread (like sourdough or ciabatta), cubed

8 large eggs

2 cups whole milk

1 cup sharp cheddar cheese, grated

1 cup cooked sausage or bacon, crumbled

1 cup fresh spinach, chopped

1 medium onion, diced

1 bell pepper (any color), diced

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon nutmeg (optional)

Fresh herbs (like parsley or chives) for garnish

Instructions
 

Prepare the Dish: Grease a 9x13-inch baking dish with cooking spray or butter.

    Layer the Bread: Evenly distribute the cubed bread in the bottom of the greased dish.

      Add the Mix-Ins: In a large bowl, combine the crumbled sausage (or bacon), spinach, onion, and bell pepper. Spread this mixture over the bread cubes.

        Make the Egg Mixture: In another bowl, whisk together the eggs, milk, garlic powder, salt, pepper, and nutmeg until well combined.

          Pour and Cover: Pour the egg mixture over the bread and vegetable layers, ensuring everything is evenly soaked. Gently press down the bread if needed. Cover the dish with plastic wrap or aluminum foil and refrigerate overnight (or for at least 4 hours).

            Preheat the Oven: The next morning, preheat your oven to 350°F (175°C).

              Bake: Remove the cover from the casserole and bake for 45-50 minutes, or until the top is golden brown and the egg is set in the center. You can check its doneness with a knife; it should come out clean.
