Ingredients
  

  • 4 boneless skinless chicken breasts chicken breasts about 6 oz each
  • 1 tablespoon fresh thyme chopped
  • 1/2 teaspoon red pepper flakes optional for heat
  • 3 cloves garlic minced
  • 1 cup dry white wine such as Sauvignon Blanc
  • 2 tablespoons unsalted butter divided
  • 2 tablespoons extra virgin olive oil for searing
  • 1 cup chicken broth low sodium
  • salt and pepper to taste

Instructions
 

  • Season the chicken breasts generously with salt, pepper, and chopped thyme on both sides. Let them sit at room temperature for 10 minutes to enhance flavor.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
  • In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, then add the white wine, scraping up any brown bits from the pan. Let it simmer for 3-4 minutes until slightly reduced.
  • Pour in the chicken broth and add the red pepper flakes, then return the chicken breasts to the skillet. Simmer for an additional 5 minutes to allow the flavors to meld and the sauce to thicken slightly.
  • Finish the sauce by swirling in the butter until melted and well combined. Taste and adjust seasoning with salt and pepper as needed.
  • Serve the chicken on a plate, spooning the white wine garlic sauce over the top. Garnish with additional thyme if desired.
