1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries)

1/4 cup Greek yogurt

Maple syrup (for drizzling)

Mint leaves (for garnish)

Instructions
 

In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.

      Pour the wet ingredients into the dry ingredients and stir until just combined (it’s okay if there are a few lumps).

        Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

          Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side (about 2-3 minutes per side).

            Once cooked, stack pancakes in a bowl, creating a “bowl” effect.

              Top the pancake stack with mixed berries and a generous dollop of Greek yogurt.

                Drizzle maple syrup over the top.

                  Garnish with fresh mint leaves for a pop of color and added freshness.
