Ingredients
  

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/4 teaspoon salt

1 cup milk (preferably whole milk or your choice of non-dairy milk)

1 large egg

2 tablespoons melted butter (or coconut oil)

1 teaspoon vanilla extract

1/2 cup mini chocolate chips (or blueberries for a fruity twist)

Maple syrup (for serving)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line it with mini muffin liners.

    In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

      In a separate bowl, mix the milk, egg, melted butter, and vanilla extract together until smooth.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

          Fold in the mini chocolate chips (or blueberries) gently into the batter.

            Using a spoon or a small ice cream scoop, fill each mini muffin cup about 2/3 full with the batter.

              Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden.

                Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

                  Serve warm with a drizzle of maple syrup for dipping or simply enjoy them plain!
