Ingredients

1 cup all-purpose flour

2 tbsp sugar

2 tsp baking powder

½ tsp baking soda

½ tsp salt

1 large egg

1 cup buttermilk (or milk + 1 tbsp vinegar)

2 tbsp melted butter

1 tsp vanilla extract

½ cup mini chocolate chips (or berries, nuts, or any mix-ins you like)

Cooking spray or extra butter for greasing

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a mini muffin pan with cooking spray or melted butter.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

Add Mix-ins: Fold in the mini chocolate chips (or your preferred mix-ins) gently into the batter.

Fill Muffin Pan: Spoon the batter into the prepared mini muffin pan, filling each cavity about ¾ full.

Bake: Place the muffin pan in the preheated oven and bake for about 10-12 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the pancake poppers to cool in the pan for 2-3 minutes before transferring them to a wire rack. Serve warm with maple syrup, honey, or fresh fruit on the side.
