Ingredients
  

  • 3 cups water for boiling pandan leaves
  • 10 leaves pandan leaves washed and tied in a knot
  • 1 cup coconut milk preferably fresh or canned
  • 1/2 cup sugar adjust to taste
  • 1/4 teaspoon salt to enhance flavor
  • 1 cup ice cubes for serving
  • 1 teaspoon vanilla extract optional for added flavor
  • 1 tablespoon lime juice freshly squeezed for brightness

Instructions
 

  • In a pot, bring the water to a boil and add the tied pandan leaves. Let it simmer for 15 minutes to infuse the water with the pandan flavor.
  • Remove the pandan leaves and add sugar to the pandan-infused water, stirring until fully dissolved. Allow the mixture to cool.
  • Once cooled, combine the pandan syrup with coconut milk in a large pitcher. Add salt and stir well to combine.
  • For serving, fill glasses with ice cubes and pour the pandan coconut mixture over the ice. Add a splash of lime juice and a dash of vanilla extract if desired.
