Ingredients
  

  • 4 medium Russet potatoes peeled and cut into shoestrings
  • 1 tablespoon fresh rosemary finely chopped
  • 1 tablespoon fresh thyme finely chopped
  • 3 cloves garlic minced
  • 1 cup freshly grated Parmesan cheese
  • 1/4 cup olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sea salt or to taste
  • 1 teaspoon paprika for added flavor
  • 1 tablespoon fresh parsley finely chopped for garnish

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine the shoestring-cut Russet potatoes, olive oil, minced garlic, rosemary, thyme, paprika, sea salt, and black pepper. Toss well to ensure all the fries are evenly coated with the seasoning.
  • Spread the seasoned fries in a single layer on the prepared baking sheet, making sure they are not overcrowded to achieve maximum crispiness. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  • Once the fries are baked, remove them from the oven and immediately sprinkle with freshly grated Parmesan cheese while they are still hot, allowing the cheese to melt slightly.
  • Garnish the fries with finely chopped parsley for a fresh touch and serve immediately with your favorite dipping sauce.
