1.5 lbs baby potatoes

1/2 cup grated Parmesan cheese

1/4 cup olive oil

2 tsp garlic powder

1 tsp dried oregano

1 tsp paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

For the Garlic Dip:

1/2 cup sour cream

1/4 cup mayonnaise

2 cloves garlic, minced

1 tsp lemon juice

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash the baby potatoes thoroughly and pat them dry. Cut them in half for quicker cooking.

      Season the Potatoes: In a large bowl, combine the olive oil, garlic powder, dried oregano, paprika, salt, and pepper. Add the halved potatoes and toss until they are well coated in the oil and seasonings.

        Add Parmesan: Sprinkle the grated Parmesan cheese over the potatoes and toss gently until all the potatoes are evenly coated.

          Bake the Potatoes: Spread the seasoned and cheese-coated potatoes in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until they are golden brown and tender, flipping halfway through for even cooking.

            Prepare the Garlic Dip: While the potatoes are baking, mix together the sour cream, mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl. Stir well until the ingredients are fully combined. Adjust seasoning if necessary.

              Garnish and Serve: Once the potatoes are done baking, remove them from the oven and let them cool slightly. Garnish with freshly chopped parsley before serving.
