Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for heat)

1 can (28 oz) crushed tomatoes

4 cups vegetable broth (or chicken broth)

1 package (9 oz) fresh cheese tortellini

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Additional grated Parmesan for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes.

    Stir in the minced garlic, dried basil, dried oregano, and red pepper flakes (if using). Cook for another minute until fragrant.

      Pour in the crushed tomatoes and vegetable broth, stirring to combine. Bring the mixture to a simmer.

        Add the cheese tortellini to the pot and cook according to the package instructions, usually around 4-5 minutes, until the tortellini are tender.

          Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese until well blended. Season with salt and pepper to taste.

            Remove from heat and let the soup sit for a few minutes to allow the flavors to meld.

              Serve the soup hot, garnished with fresh basil leaves and additional grated Parmesan cheese if desired.
