Ingredients
  

  • 1 cup passion fruit pulp fresh or canned
  • 2 cups water for brewing the boba
  • 1 cup fresh lemon juice about 4-6 lemons
  • 1/2 cup simple syrup adjust sweetness to taste
  • 1 cup cooked tapioca pearls prepared according to package instructions
  • 1 tablespoon lime zest for extra zing
  • 2 cups ice cubes for serving
  • 1/2 teaspoon sea salt to balance flavors
  • mint leaves for garnish

Instructions
 

  • In a medium pot, bring 2 cups of water to a boil. Once boiling, add the tapioca pearls and cook according to the package instructions, usually about 20-25 minutes, until they are tender and chewy.
  • While the boba is cooking, in a large mixing bowl, combine 1 cup of passion fruit pulp, 1 cup of fresh lemon juice, and 1/2 cup of simple syrup. Mix well until combined.
  • Once the boba is cooked, drain and rinse under cold water to stop the cooking process. Set aside to cool.
  • In a large pitcher, combine the lemon-passion fruit mixture with 2 cups of ice cubes and stir until chilled. Taste and adjust sweetness with additional simple syrup if necessary.
  • To serve, place a few tablespoons of cooked tapioca pearls in the bottom of each glass. Pour the passion fruit lemonade over the boba, filling the glass about three-quarters full.
  • Garnish each glass with a sprinkle of lime zest and a few fresh mint leaves for an aromatic touch.
  • Serve immediately with a wide straw for sipping the boba and enjoy the refreshing tanginess!

Tip 1: For a creamier version, add a splash of coconut milk to the lemonade mixture.
Tip 2: Store leftover boba in a simple syrup to keep them from hardening.
