3 large eggs

½ cup buttermilk

For the White Chocolate Buttercream:

1 cup unsalted butter, softened

2 cups powdered sugar

4 oz white chocolate, melted and slightly cooled

2 tbsp heavy cream

1 tsp vanilla extract

For Garnish:

Additional passionfruit pulp or slices

White chocolate shavings

Instructions

Prepare the Oven and Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Make the Cake Batter: In a small bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In a large bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy. This should take about 3-5 minutes.

Incorporate Eggs and Flavorings: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and fresh passionfruit pulp until well combined.

Combine Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.

Bake the Cakes: Divide the batter evenly between the prepared cake pans and smooth the tops. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Prepare the White Chocolate Buttercream: In a large mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, mixing on low speed until combined.

Pour in the melted white chocolate, heavy cream, and vanilla extract. Beat on medium high speed until the frosting is light and fluffy (about 2-3 minutes). If the buttercream is too thick, add a splash of heavy cream until the desired consistency is reached.

Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of buttercream on top. Place the second cake layer on top and cover the entire cake with the remaining buttercream, smoothing it out with a spatula.

Garnish and Serve: Decorate the top of the cake with additional passionfruit pulp or slices, and sprinkle with white chocolate shavings for an elegant touch.
