12 oz spaghetti or linguine

2 tablespoons extra-virgin olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 can (14 oz) diced tomatoes (with juices)

1 tablespoon tomato paste

1 cup black olives, pitted and chopped

2 tablespoons capers, drained and rinsed

1 teaspoon dried oregano

1/2 teaspoon sugar

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving, optional)

Instructions
 

Cook the Pasta: Fill a large pot with salted water and bring it to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sauté for about 1 minute, or until the garlic is fragrant but not browned.

      Add Tomatoes: Stir in the diced tomatoes (with their juices) and tomato paste. Mix well and let it simmer for about 5 minutes, allowing the flavors to meld.

        Incorporate Olives and Capers: Add the chopped black olives, capers, dried oregano, and sugar to the sauce. Stir to combine and simmer for an additional 5-7 minutes, until the sauce thickens slightly. Season with salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked pasta directly into the skillet with the sauce. Toss everything together, adding reserved pasta water a little at a time until you reach your desired consistency.
