2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup buttermilk

3 large eggs

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon vanilla extract

2 cups fresh peaches, peeled and diced (about 3-4 medium peaches)

For the Brown Sugar Frosting:

½ cup unsalted butter, softened

1 cup packed brown sugar

¼ cup milk

2 cups powdered sugar

1 teaspoon vanilla extract

Pinch of salt

Instructions
 

Prepare the Oven and Pans:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      Make the Peach Cake Batter:

        - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

          - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

            - In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the creamed mixture, alternating with the buttermilk. Mix until just combined.

              - Gently fold in the diced peaches until evenly distributed.

                Bake the Cake:

                  - Divide the batter equally between the two prepared pans. Smooth the tops with a spatula.

                    - Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                      - Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

                        Prepare the Brown Sugar Frosting:
