Ingredients
  

1 ripe peach, peeled and diced

1 tablespoon granulated sugar

1/2 teaspoon lemon juice

1/2 cup heavy whipping cream

2 tablespoons powdered sugar

1/4 teaspoon vanilla extract

1/4 cup cream cheese, softened

1/4 cup Greek yogurt

1 tablespoon crushed graham crackers (for layering)

Fresh mint leaves (for garnish, optional)

Instructions
 

In a small bowl, combine the diced peaches with granulated sugar and lemon juice. Toss to coat and set aside to macerate for about 15 minutes.

    In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form. Be careful not to overwhip.

      In another bowl, blend the softened cream cheese and Greek yogurt together until smooth and well combined.

        Gently fold the whipped cream into the cream cheese mixture until fully incorporated and fluffy.

          In two small serving glasses or bowls, start layering the dessert. Begin with a spoonful of the peach mixture at the bottom.

            Add a layer of the mousse mixture on top of the peaches, followed by a sprinkle of crushed graham crackers.

              Repeat the layers until you reach the top of the glasses, finishing with a layer of mousse.

                Garnish your trifle with a few pieces of the macerated peaches on top and a sprig of fresh mint for a pop of color.

                  Chill in the refrigerator for about 30 minutes before serving to let the flavors meld.
