2 ripe peaches, pitted and chopped

1 tablespoon honey or maple syrup

1 teaspoon lemon juice

1/2 cup heavy whipping cream

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract

1/4 cup yogurt (plain or flavored)

2 to 3 ladyfinger cookies, cut into halves or quarters

Fresh mint leaves for garnish

Instructions
 

Prepare the Peach Mixture: In a small bowl, combine the chopped peaches, honey (or maple syrup), and lemon juice. Toss gently to coat the peaches and set aside to macerate for about 10 minutes.

    Make the Mousse:

      - In a mixing bowl, whip the heavy cream and powdered sugar with a hand mixer or stand mixer until soft peaks form.

        - Fold in the vanilla extract and yogurt gently until combined and creamy. Ensure not to deflate the whipped cream.

          Layer the Trifle:

            - In two small glasses or bowls, start with a layer of the ladyfinger pieces at the bottom.

              - Spoon a layer of the peach mixture over the ladyfingers.

                - Add a layer of the peach mousse on top of the peaches.

                  - Repeat with another layer of ladyfingers, followed by peaches, then finish with a generous layer of mousse.

                    Chill: Refrigerate the trifles for at least 30 minutes to firm up and allow the flavors to meld together.

                      Serve: Before serving, garnish with a few mint leaves and a sprinkle of extra chopped peaches on top for a fresh touch.
