Peanut Butter and Jelly Baked Oatmeal

2 cups rolled oats

1/2 cup creamy peanut butter

2 tablespoons honey or maple syrup

2 ripe bananas, mashed

2 cups almond milk (or milk of your choice)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup mixed berries (fresh or frozen, such as raspberries and blueberries)

1/4 cup strawberry or grape jam

Optional toppings: sliced bananas, chopped nuts, or a drizzle of additional peanut butter

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.

    Mix the Wet Ingredients: In a large mixing bowl, combine the creamy peanut butter, honey (or maple syrup), mashed bananas, almond milk, and vanilla extract. Stir until the mixture is smooth and fully combined.

      Combine Dry Ingredients: In a separate bowl, mix the rolled oats, baking powder, and salt.

        Incorporate the Dry into the Wet: Gradually add the dry mixture to the wet mixture, stirring well until everything is well combined.

          Fold in the Berries: Carefully fold in the mixed berries, ensuring they are evenly distributed throughout the mixture.

            Layer the Jam: Pour half of the oatmeal mixture into the prepared baking dish. Gently dollop the jam over this layer and spread it out slightly. Pour the remaining oatmeal mixture on top and spread it evenly.

              Bake: Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

                Cool and Serve: Allow the baked oatmeal to cool for a few minutes before slicing. Serve warm, with optional toppings like additional sliced bananas, chopped nuts, or a drizzle of peanut butter.
