Ingredients

2 flour tortillas

1/2 cup creamy or crunchy peanut butter

1 banana, sliced

1 tablespoon honey (optional)

1/4 teaspoon cinnamon

1/4 cup mini chocolate chips (optional)

1 tablespoon coconut oil (for frying)

Powdered sugar (for dusting, optional)

Instructions

Spread the Peanut Butter: Start by spreading 1/4 cup of peanut butter evenly on one side of each tortilla.

Layer the Fillings: On one of the tortillas (the peanut butter side), arrange the banana slices evenly. Drizzle honey over the bananas if desired, and sprinkle cinnamon across the mixture. Add mini chocolate chips if you like an extra touch of sweetness.

Assemble the Quesadilla: Place the second tortilla peanut butter side down on top of the filled tortilla, pressing down gently to seal the edges.

Heat the Pan: In a skillet, heat the coconut oil over medium heat until it’s hot but not smoking.

Cook the Quesadilla: Carefully place the quesadilla in the skillet and cook for about 3-4 minutes on one side until it turns golden brown. Flip and cook for another 3-4 minutes on the other side until it's crispy and the peanut butter is warm.

Slice and Serve: Remove from the skillet and let it cool for a minute. Cut the quesadilla into wedges, dust with powdered sugar if you prefer, and serve warm.
