2 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 medium pear, thinly sliced

1 medium apple (like Granny Smith), thinly sliced

1 cup sharp cheddar cheese, grated

1/2 cup goat cheese, crumbled

1 medium onion, thinly sliced

1 tablespoon brown sugar

1 tablespoon balsamic vinegar

Salt and pepper, to taste

Fresh thyme leaves (optional, for garnish)

Instructions
 

Caramelize the Onions: In a skillet over medium heat, add 1 tablespoon of butter. Once melted, add the thinly sliced onions. Cook for about 10 minutes, stirring occasionally until they begin to soften. Add brown sugar and balsamic vinegar, stirring to combine. Cook for another 15-20 minutes until the onions are deep golden brown. Season with salt and pepper to taste, then set aside.

    Prepare the Bread: Spread the remaining butter on one side of each slice of sourdough bread. This will help achieve a golden and crispy crust.

      Assemble the Sandwich: On the unbuttered side of one slice, layer half of the grated cheddar cheese, followed by the slices of pear and apple. Add all of the caramelized onions, then top with the crumbled goat cheese. Finally, sprinkle the remaining cheddar cheese on top and place the second slice of bread, buttered side up.

        Grill the Sandwich: Heat a skillet over medium heat. Carefully place the sandwich into the skillet. Grill for about 4-5 minutes, or until the bread is golden brown and the cheese is beginning to melt. Carefully flip the sandwich and grill for an additional 4-5 minutes on the other side.

          Serve: Once both sides are golden and the cheese is melted, remove the sandwich from the skillet. Let it sit for a minute before slicing in half. Garnish with fresh thyme leaves if desired, and serve warm.
