2 slices of whole grain or sourdough bread

1 tablespoon unsalted butter (for spreading)

1 medium ripe pear, thinly sliced

1 medium apple (Honeycrisp or Granny Smith), thinly sliced

1/2 cup sharp cheddar cheese, shredded

1/2 cup fontina cheese, shredded

1 medium onion, thinly sliced

1 tablespoon olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Fresh thyme leaves (optional, for garnish)

Instructions
 

Caramelize the Onions: In a skillet over medium heat, add the olive oil and sliced onions. Cook, stirring occasionally, for about 15-20 minutes until the onions are golden brown and caramelized. Add the balsamic vinegar and a pinch of salt and pepper, cooking for another 2-3 minutes. Remove from heat and set aside.

    Prep the Bread: Spread a thin layer of butter on one side of each slice of bread.

      Layer the Ingredients: On the unbuttered side of one slice, layer half of the cheddar and fontina cheeses. Add a layer of pear and apple slices, followed by the caramelized onions and remaining cheese. Top with the other slice of bread, buttered side up.

        Grill the Sandwich: In a skillet over medium heat, add the sandwich and cook for about 3-4 minutes until the bottom is golden brown. Carefully flip and cook the other side for another 3-4 minutes, or until the cheese is melted and the bread is beautifully toasted.

          Serve: Remove the sandwich from the skillet and let it cool for a minute. Slice in half and garnish with fresh thyme leaves if desired. Serve warm and enjoy!
