Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon peppermint extract

1 cup dark chocolate chips

1 cup white chocolate chips

1/2 cup crushed peppermint candies or candy canes

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

Cream Butter and Sugars: In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.

Add Wet Ingredients: Beat in the egg, vanilla extract, and peppermint extract until well combined.

Combine Dry and Wet Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Fold in Chocolate Chips: Gently fold in the dark chocolate chips and crushed peppermint candies.

Scoop Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.

Bake: Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked; they will continue to set as they cool.

Melt White Chocolate: While the cookies are cooling, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.

Drizzle White Chocolate: Drizzle the melted white chocolate over the cooled cookies and immediately sprinkle with additional crushed peppermint candies.

Cool and Serve: Allow the cookies to set completely before serving. Enjoy the delicious peppermint bark flavor!
